Tomato Coconut Chutney — vibrant and flavorful, this fasting-friendly chutney comes together in just 10 minutes and pairs perfectly with dosas and idlis! Store this in the fridge for up to a week and you have the perfect accompaniment to add a pop of tang and spice to any dish! WATCH HOW TO MAKE TOMATO COCONUT CHUTNEY: In a pan, heat oil with some cumin seeds, peanuts, green chili, and ginger. Add in cilantro stems followed by some roughly chopped tomatoes and salt. Let this soften slightly and add in water. Cook covered for 7-8 minutes making sure not to overcook this and then add in coconut and blend until smooth. Finish with a classic tadka with some cashews and this tomato coconut chutney is ready! Instant Vrat ka Dosa — crisp and light, this dosa is made with sama rice, sabudana, and potato for the most beautiful golden brown texture! Paired with an herby hariyali aloo masala that has mint and cilantro, enjoy this while fasting for Navratri and you’re bound to fall in love! WATCH HOW TO MAKE INSTANT VRAT KA DOSA – SAMA KE RICE KA DOSA We’ll start by roasting our sama ke chawal or little millet for a few minutes before transferring to a blender with sabudana and blending into a fine powder. Transfer this dosa mix to a bowl and add in spices, cilantro, ginger, and green chilies. Well also add some raw potato blended with yogurt for sourness and crispness. Add in water and give this a mix before letting rest on the counter for 10 minutes. For our hariyali aloo masala, we’ll start with a basic tadka with cumin seeds, cashews, and curry leaves. With notes of rose, cardamom, saffron, and almond, this is perfect for Navratri and for those sweet-tooth cravings. WATCH HOW TO MAKE BADAM ROSE ROTI CHURMA: We’ll start by mixing together whole wheat flour, almond flour, salt, ghee, and some fresh beetroot juice. Use your hands to work this together until well combined. Add in saffron milk and use your hands to knead this into a medium firm dough. Now we’ll divide the dough into 3 equal parts and roll them out into 1/2 inch thick rotis. Transfer to a hot tava and cook on low heat until golden brown on both sides with a drizzle of ghee. Make sure to press down on them to ensure they cook through since we are keeping them a bit on the thicker side. Now, we’ll crush the rotis using our hands for that classic churma texture.
