Skillet Taco Mac ’n Cheese — a Mexican twist to the ultimate comfort food, this is a festive way to spice up some velvety, rich mac ’n cheese! Baked to golden brown perfection with a breadcrumb topping and served with pico de gallo, guacamole, and sour cream for for some heat and freshness, this is a timeless riff that will never fail to put a smile on someone’s face!
- 2 cups macaroni , boiled
- 3 tbsp butter , unsalted
- 2 tbsp all purpose flour
- 3 cups milk
- 1/4 cup sharp cheddar cheese
- 1/2 cup gruyere cheese
- 1 1/2 tsp sugar
- 1 tsp taco seasoning
- 1/2 tsp black pepper
- salt , to taste
- ½ tsp garlic powder
- 1 tsp italian seasoning
- ½ tsp red chili flakes
- 2 tbsp breadcrumbs
- 2 tbsp sharp cheddar cheese
- guacamole , see my Mango Guacamole recipe
- pico de gallo , see my Pico de Gallo recipe
- sour cream
- tortilla chips , crushed

In a skillet, melt butter on medium heat and whisk in your flour. Continue whisking until it becomes light brown and frothy. The texture should be similar to wet sand.

Then, add in your milk and whisk continuously until well combined to prevent any lumps. Let come up to a simmer. Add in your salt, italian seasoning, red chili flakes, sugar, black pepper, taco seasoning, garlic powder, cheese, and macaroni. Mix gently and let cook for another 2-3 minutes. Transfer to an oven safe skillet or baking dish.

For your breadcrumb topping, mix together shredded cheese and breadcrumbs until evenly combined. Spread this in an even layer on top of your mac ’n cheese. Bake for 10 minutes at 350℉ / 175℃ and then broil for a few minutes, until breadcrumbs are golden.

Garnish with pico de gallo, guacamole, sour cream, and crushed tortilla chips. Enjoy!
