Mix charred roasted corn with sour cream, mayo, feta cheese, cilantro, and green chilies. Then, a big squeeze of lemon for that brightness.
I used this amazing South Indian finishing spice from Chutni Punch
Toss all this together, serve in individual cups, and this is truly the easiest summer favorite that you can make! Pair this with some lemonade or sliced watermelon, and lunch for a hot afternoon is sorted!

- 2 1/2 cups roasted corn , charred
- 1 tbsp sour cream
- 1 tbsp mayonnaise
- 1 tbsp feta cheese
- 1 tbsp cilantro
- 2 tsp green chilies , or jalapenos, finely chopped
- 2 tsp lemon juice
- 1/2 tsp paprika
- 1/4 tsp red chili powder
- 1/2 tsp roasted cumin powder
- 1/2 tsp chaat masala
- 3/4 tsp salt , adjust as per taste
- 2 tsp olive oil
- feta cheese
- mint leaves
- red chilies

Mix all the ingredients together, garnish and enjoy!
