In a skillet, melt butter on medium heat and whisk in your flour. Continue whisking until it becomes light brown and frothy. The texture should be similar to wet sand.
Then, add in your milk and whisk continuously until well combined to prevent any lumps. Let come up to a simmer. Add in your salt, italian seasoning, red chili flakes, sugar, black pepper, taco seasoning, garlic powder, cheese, and macaroni. Mix gently and let cook for another 2-3 minutes. Transfer to an oven safe skillet or baking dish.
For your breadcrumb topping, mix together shredded cheese and breadcrumbs until evenly combined. Spread this in an even layer on top of your mac ’n cheese. Bake for 10 minutes at 350℉ / 175℃ and then broil for a few minutes, until breadcrumbs are golden.
