Loaded Plantain Nachos — loaded with spicy beans, guacamole, fresh veggies, and melty cheese, these are the ultimate appetizer to entertain with! 🫶
WATCH HOW TO MAKE LOADED PLANTAIN NACHOS:
For our beans, we’ll start by sautéing some garlic in oil. Add in onions and once translucent, go in with cooked kidney beans and all your spices. Let this saute for a minute and I like adding some hot sauce for a bit of heat. These beans turn out so spicy and flavorful, I can’t get enough!
To assemble our nachos, we’ll add a layer of plantain chips on a baking tray. Spread on a generous layer of some melty cheese of your choice, followed by the beans that we made, veggies like colorful peppers, and some more cheese. Add a few jalapeños if you’d like along with olives, cilantro, and tomatoes. Bake these until the cheese is nice and melty and top with lettuce, homemade guacamole, and some sour cream.

- 1 bag plantain chips or banana chips , store-bought
- 1 cup cheese , shredded, any melty cheese
- 1/2 cup pico de gallo , see my Pico de Gallo recipe
- 1/4 cup mixed color bell peppers , finely chopped
- 1/4 cup pickled onions , finely chopped
- 1 jalapenos , sliced
- 1/4 cup olives , sliced
- 2 tbsp cilantro , finely chopped
- 1 1/2 tbsp oil
- 2 tsp ginger garlic paste
- 1/2 cup shallots (onions) , finely chopped
- 2 cup rajma (kidney beans) , canned or boiled
- 2 tsp taco seasoning
- 1/2 tsp red chili powder
- 1/4 tsp black pepper
- 1 tsp roasted cumin powder
- 1/2 tsp oregano
- salt , to taste
- 2 tsp sriracha , or any hot sauce
- lettuce , torn

- sour cream

In a pan, on medium heat, add in oil. Then, add in your shallots, ginger, and garlic. Sauté for 2 to 3 minutes. Then, once your onions are translucent, add in your kidney beans, all the spices and hot sauce. If the beans are too dry then sprinkle 1-2 tbsp water. Mix everything together and your spicy beans are ready.

Preheat the oven to 370°F/185°C. This is important to maintain the crispness of the plantain chips, otherwise they will get soggy due to the toppings while you bake them.

After that, sprinkle on half of the cheese followed by your spicy beans, pico de gallo, pickled onions, peppers or any veggies of your choice .

Top these with another layer of the remaining cheese. jalapeños and black olives.

Now, bake for about 10 minutes or until the cheese melts

Once ready, garnish with some guacamole, sour cream and cilantro. Enjoy!
