  • 2 cup rajma (kidney beans) , canned or boiled
  • 2 tsp taco seasoning

Instructions

Spicy Beans:

  1. In a pan, on medium heat, add in oil. Then, add in your shallots, ginger, and garlic. Sauté for 2 to 3 minutes. Then, once your onions are translucent, add in your kidney beans, all the spices and hot sauce. If the beans are too dry then sprinkle 1-2 tbsp water. Mix everything together and your spicy beans are ready.

Nachos:

  1. Preheat the oven to 370°F/185°C. This is important to maintain the crispness of the plantain chips, otherwise they will get soggy due to the toppings while you bake them.

  2. After that, sprinkle on half of the cheese followed by your spicy beans, pico de gallo, pickled onions, peppers or any veggies of your choice .

  3. Top these with another layer of the remaining cheese. jalapeños and black olives.

  4. Now, bake for about 10 minutes or until the cheese melts

  5. Once ready, garnish with some guacamole, sour cream and cilantro. Enjoy!
