This is a quick and easy meal that's perfect for using up leftover rice and loaded with colorful veggies for a nutritious boost! Serve it up with a side of refreshing raita or dahi for a complete and satisfying meal made with simple ingredients you always have on hand!
- 1 cup whole moong beans , boiled with salt and turmeric
- 2 tbsp oil , or ghee
- 1/2 cup onions , diced
- 2 tsp garlic , minced
- 1 tsp ginger , minced
- 1 tsp green chilies , minced
- 1/2 cup tomatoes , diced
- 1 tbsp tomato paste
- 3/4 cup spinach , chopped
- 1/4 cup mixed color bell peppers , diced
- 1/2 cup mixed vegetables , frozen or fresh - I used peas and corn
- 1 1/2 cup cooked rice
- 1 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1 tsp italian herbs
- 1/2 tsp red chili flakes
- salt , to taste
- 1 tbsp lemon juice
- 2 tbsp cilantro , finely chopped
- 6 basil leaves , torn

Heat oil in a pan and add in your onions, garlic, green chilies, and ginger. Saute for 1-2 minutes. Then, add in tomatoes and tomato paste and saute for a minute.

Add in your spinach, bell peppers, mixed vegetables (I used peas and corn) and stir gently. Add in your cooked moong, rice, spices, lemon juice, cilantro, and basil. Stir gently and let cook for 3-4 minutes until well-combined.

Your Moong Masala Pulao is ready to serve with raita or dahi and enjoy!
