These Marinated Cherry Tomatoes are super easy to make and bursting with color to top off some toast, serve in a wrap, or simply use in a salad! It’s my favorite summer side dish that’s so versatile it’s great for anything from grilling to garnish!
STEPS FOR MAKING MARINATED CHERRY TOMATOES:

These Marinated Cherry Tomatoes are super easy to make and bursting with color to top off some toast, serve in a wrap, or simply use in a salad! It’s my favorite summer side dish that’s so versatile it’s great for anything from grilling to garnish!
- 2 cups cherry tomatoes , halved
- 1 medium red onions , finely sliced
- 3-4 cloves garlic , minced
- 8-10 leaves basil , fresh and chopped
- 1/2 cup extra virgin olive oil
- 1 1/2 tbsp red wine vinegar , or any vinegar would do
- 1 tbsp lemon juice
- 1/2 tsp sugar
- 1/2 tsp black pepper
- 1/2 tsp red chili flakes
- 1 tsp dried basil
- 1 1/2 tsp salt , adjust to taste

In a bowl, whisk together the olive oil, vinegar, salt, pepper, dried basil, sugar, chili flakes, and lemon juice.

In the same bowl, add in your tomatoes, onions, garlic, and fresh basil. Mix until well coated.

Store in a sterilized, airtight jar in the fridge (for up to 3 days) and enjoy on toast, with wraps, and just use in a salad!
