Mango Berry Parfait

The base of this parfait is a luscious mango mixture made by blending ripe mangoes with chenna, cream cheese, a splash of milk, and a pinch of salt. This creamy layer is complemented by a vibrant berry chia jam, prepared by mashing jamun, blueberries, and strawberries with chia seeds, allowing it to thicken naturally.

To assemble, start with a layer of crushed biscuits at the bottom of your serving glass, followed by the berry chia jam. Add a sprinkle of chopped nuts and seeds for texture, then spoon in the chilled mango blend. Top it off with a dollop of whipped yogurt for a light and refreshing finish.

This Mango Berry Parfait is not only visually appealing but also a healthier dessert option that’s perfect for summer gatherings or as a sweet treat to enjoy any time of the day.

Mango: Use ripe, sweet mangoes like Alphonso, Kesar, or Ataulfo for the best flavor. If fresh mangoes aren’t available, canned pulp can work — just be sure it’s unsweetened and adjust for sweetness accordingly.

Chenna: Homemade or store-bought chenna (fresh paneer) gives the mango layer a creamy, slightly grainy richness. If unavailable, you can substitute with well-drained ricotta cheese or even Greek yogurt for a smoother finish.

Cream Cheese: Adds body and tang to the mango blend. Mascarpone or hung curd can be used as alternatives for a slightly different texture and flavor.

Mixed Berries: Feel free to use any berries you have — strawberries, blueberries, raspberries, or jamun. Frozen berries work just as well; thaw and mash before mixing with chia seeds.

Chia Seeds: These give the berry layer a jam-like consistency. Basil seeds (sabja) can be used as a substitute, but they won’t provide the same thickening effect.

Biscuits: Digestive biscuits, graham crackers, or even granola can be used as the crunchy base. For a gluten-free version, opt for gluten-free cookies or oats.

Nuts & Seeds: Use any mix you like — almonds, pistachios, walnuts, sunflower or pumpkin seeds. Toasting them lightly enhances the flavor.

Whipped Yogurt: Plain or Greek yogurt whipped with a little honey makes a light and creamy topping. Coconut yogurt is a great dairy-free option.

Ingredients
Mango Layer:
  • 2 mangoes
  • 1/2 cup cottage cheese (chenna) or paneer
  • 2 tbsp cream cheese , optional
  • 1/4 cup milk
  • 2 tbsp sugar or honey , adjust according to sweetness of the mangoes
  • pinch salt
Berry Chia Jam:
  • 1/2 cup mixed berries , I've used bluerries and strawberries
  • 7-8 jamun (java plum or indian blackberry) , deseeded
  • 2 tbsp chia seeds , soaked in 1/2 cup water for 30 mins
  • honey , as needed
Cookies Layer:
  • 8 graham crackers or cookies
  • 2 tbsp butter , melted
Nuts Layer:
  • 4 tbsp mixed nuts & seeds , coarsely crushed. I've used almonds, cashews, pistachios, pumpkin seeds, sunflower seeds
Garnish:
  • greek yogurt or thick yogurt , whipped
  • mangoes , diced
  • black sesame seeds
Instructions
  1. For the mango layer, blend all the ingredients together into a smooth and creamy thick mixture.

  2. For the berry chia jam, mash together the berries and jamnu and mix in soaked chia seeds, honey (as needed) and let it rest for 30 mins in the fridge

  3. Crush the graham crackers or cookies (of your choice) and mix it with melted butter.

  4. To assemble, start with a layer of crushed cookies at the bottom of your serving glass, followed by the berry chia jam. Add a sprinkle of chopped nuts and seeds for texture, then spoon in the chilled mango blend. Top it off with a dollop of whipped yogurt for a light and refreshing finish. Garnish with some mangoes and black sesame seeds. Your Mango Berry Parfait is ready, enjoy!
