Ema Datshi Fondue – rich and velvety, this upgraded cheese fondue takes on a spicy twist with this viral Bhutanese dish! With chilies, bell peppers, onions, and garlic, these bold and bright flavors pair really well with a mix of homemade and store-bought accompaniments!

Ema Datshi Fondue

For the ema datshi, heat oil and add in your onions and garlic. Let these sauté for just a minute and then add in all your sliced chilies and some bell peppers for color and crunch. Give this a mix and in goes some water while we let this simmer so the veggies get cooked.

Now it’s time to go in with our cheese! I used a mix of shredded Amul cheese and mozzarella cheese. Give this a mix and let this cook until the cheese starts to melt and you see this become nice and melty. Since we want the fondue to have a really silky and velvety texture, I even like adding a little cornstarch slurry at the end too.

For one of my sides, I made this delicious Achari Flatbread. Start by mixing achaar of your choice with butter and spread this into an even layer on your flatbread. You can totally customize this with any bread you like! Sprinkle with some cilantro and kalonji seeds. Cut this into your desired shapes and bake until crisp.

When serving, make sure to dress this up with some fun sides! I’ve used the achaari flatbread crackers, some beetroot walnut kebabs, and veggies. You can even use store-bought naan and kulcha.

Ingredients
Ema Datshi:
  • 3 tsp oil
  • 2 tbsp garlic , finely chopped
  • 2 onions , thinly sliced
  • 8 green & red chillies , mix of spicy and non-spicy chilies
  • 1/2 cup mixed color bell peppers , thinly sliced
  • 1/2 cup amul cheese , or use any melty cheese of your choice
  • 1/2 cup swiss cheese , or use any melty cheese of your choice
  • 1/4 cup water
  • 2 tsp corn starch , mixed with 2 tbsp water
Achari Flatbread Crackers:
  • 1 flatbread , or use any bread of your choice
  • 1 tbsp mixed pickle , mashed
  • 2 tbsp melted butter
  • cilantro
  • onion seeds (kalonji)
Instructions
Ema Datshi:
  1. Heat oil in a pan and add in your onions and garlic. Let these sauté for just a minute and then add in all your sliced chilies and bell peppers for color and crunch.

  2. Mix together and add in 1/4 cup of water. We don't want to add too much water as the veggies will release water and we want a slightly thicker fondue like consistency. Cover and let this simmer on medium flame for 5-6 minutes until the chilies and peppers are softened .

  3. Turn the flame to low and add in your cheese. I used a mix of Amul and swiss cheese, but you can use any melty cheese of your choice. Don't use a stringy cheese like mozzarella.

  4. Mix together and cook covered for a minute for the cheese to melt.

  5. Open the cover and if you see it watery then slowly add cornstarch slurry (as needed) while stirring until you reach fondue consistency. Then switch off the gas and your Ema Datshi Fondue is ready!

  6. Serve this with some achari flatbread crackers, beetroot kebabs, masala kulcha, naan and veggies. Enjoy!

Achari Flatbread Crackers:
  1. Mix butter and mashed mixed pickle and spread it on a flatbread (or any bread of your choice). Sprinkle cilantro and kalonji on top.

  2. Cut them in squares (or your desired shape) and bake in an oven at 350℉ / 175℃ for 10 minutes until crisp. Your Achari Flatbread Crackers are ready!
