Creamy Lemon Herb Pasta

For the pasta, start by heating oil in a pan and to that add garlic and chopped leeks. Let this sauté for a minute before deglazing with some white wine.

Go in with the pasta, parmesan cheese, fresh herbs like dill and basil, some lemon zest and juice for brightness, salt, pepper, chili flakes, and cashew cream that will make this so rich and decadent!

Give this a gentle mix and now we’ll finish with peas and baby spinach for some color and crunch. Trust me when I say that your special someone will feel so loved if you make this for them this Valentine’s Day!

Ingredients
  • 3 cups boiled pasta , I used fusili corti bucati pasta
  • 2 tbsp oil
  • 5 cloves garlic
  • 1/2 cup leeks , finely chopped (or shallots)
  • 1/3 cup white wine , optional
  • 1/2 cup shredded cheese , I used parmesan
  • 2 tbsp mixed fresh herbs , I used dill, basil, rosemary, and thyme
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • salt , to taste
  • 1/4 tsp black pepper , to taste
  • 1/4 tsp red chili flakes , to taste
  • 8 cashews , soaked and blended with 1/4 cup pasta water
  • 1/4 cup peas
  • 1/2 cup baby spinach
Instructions
  1. Heat oil on medium heat in a pan and add in garlic and leeks. Saute for 2-3 minutes until slightly browned.
  2. Deglaze the pan with white wine and let bubble for 2 minutes until the alcohol evaporates.
  3. Add in the cooked pasta, cheese, fresh herbs, lemon zest, lemon juice, salt, black pepper, chili flakes, and cashew cream.
  4. Give this a mix and fold in the peas and spinach. Let sauté for 3-4 minutes until creamy and velvety. Your Creamy Lemon Herb Pasta is ready!
