Creamy Tahini Chili Noodles — bright and refreshing, these easy cold noodles feature fresh veggies like cucumbers and carrots in an addicting, sesame-based sauce! With chili paste and lemon zest for that refreshing punch and some fruit for a burst of sweetness, 15 minutes are all you need to make this!

Creamy Tahini Chili Noodles

We’ll start by mixing together ginger, garlic, tahini, soy sauce, sambal or any chili paste, some fresh lemon zest for brightness, lemon juice, honey to balance the flavors, and some hot water just to help this become super creamy and silky.

For veggies, this is totally up to you but I’ve used grated cucumber, carrots, pickled onions, spring onions, bell peppers, radish, and for a touch of sweetness some chopped grapes. Pomegranate would work great here too!

Now in goes your noodles of choice, followed by our silky tahini chili sauce. Give this all a toss and garnish with fresh mint, toasted pistachios, and some sesame seeds. Chill before serving and you’re ready to dig in!

Ingredients
  • 8 oz thin fettuccine noodles , or any noodles of your choice
Sauce:
  • 1 tsp ginger , minced
  • 1 tsp garlic minced
  • 1/4 cup tahini
  • 1/4 cup soy sauce
  • 1 1/2 tbsp sambal hot sauce , or any chili paste
  • 2 tsp lemon zest
  • 1 1/2 tbsp lemon juice
  • 2 tbsp honey
  • 1/4 cup hot water
Veggies:
  • 2 cucumbers , shaved
  • 2 carrots , shaved
  • 1/4 cup pickled onions , sliced
  • 1/4 cup green onions , finely chopped
  • 1/4 cup red bell peppers , finely chopped
  • 6-7 radish , matchsticks
  • 1/4 cup grapes , sliced lengthwise (or you can use pomegranate)
Garnish:
  • 7-8 mint leaves , torn
  • 2 tbsp roasted pistachio , coarsely crushed
  • 1 tsp toasted sesame seeds
Instructions
  1. Cook the noodles according to package instructions. Then drain and rinse them under cold water.

  2. Mix together all your sauce ingredients. Keep the sauce aside.
  3. In a large bowl, add in all your veggies.
  4. Then add the noodles and the sauce. Toss everything together and adjust the seasonings as per your taste.

  5. Garnish with mint leaves, roasted pistachios and toasted sesame seeds. Chill before serving. These quick and easy Creamy Tahini Chili Noodles are ready! Enjoy!

      To make tahini paste at home, toast sesame seeds and blend it with little bit neutral oil and a pinch of salt.
