Achari Paneer Chopped Sandwich — a desi twist on the viral trend, this sandwich is surprisingly easy to make and features roasted paneer in an achari marinade and a kachumber-inspired salad! Customize the veggies and toppings to your choice and this makes for a fun and nutritious lunch!

Achari Paneer Chopped Sandwich

For our marinade, we’ll mix together yogurt, mustard oil, and achaar, along with spices until it form a smooth paste. To this, add paneer or tofu and chickpeas and then bake or airfry until crisp.

For the salad, I’ve used lettuce, cabbage, tomatoes, onions, cucumber, mint, cilantro, cream cheese, green chutney, mustard, and imli ki chutney. Give this all a fine chop using a knife and it’s actually pretty effective despite what some videos say online!

Now we’ll add in our achari paneer and chickpeas and give this a rough chop to mix it all together. Transfer onto some toasted bread and garnish with sriracha mayo and cheese if you’d like.

Ingredients
Achari Marinade:
Sandwich:
  • 4 sets toasted bread or french baguette
  • 7-8 lettuce leaves
  • 4-5 red cabbage leaves
  • 1 medium tomatoes , roughly sliced
  • 1 medium onions , roughly sliced
  • 1 medium cucumber , sliced
  • 5-6 sprigs mint
  • 1 tbsp cilantro
  • 1 tbsp cream cheese
  • 1 tbsp mint cilantro chutney
  • 1 tsp mustard sauce
  • 2 tsp tamarind chutney
Toppings:
  • 2 tbsp sriracha mayo
  • 2 tbsp cheese
Instructions
  1. For the achari marinade, whisk together all the ingredients (except the paneer and chickpeas). Gently fold in the paneer and chickpeas until they are covered with the marinade. Airfry or bake this at 350℉/175℃ for 8-10 minutes until just cooked or pan fry for 5-6 minutes on medium heat, so they get a dry coating not too cooked

  2. For the chopped sandwich, add all the of the ingredients (except the bread) on a cutting board and give it a fine chop using a large knife. Chop the baked achari paneer and chickpeas gently and mix with the salad.

  3. Transfer the salad onto the toasted bread or baguette. Garnish with a drizzle of sriracha mayo and cheese of your choice. Enjoy!
