Watermelon Chaat Bites

The filling has some bright, herby flavors with greek yogurt, herbs, spices, and feta cheese. To give it some body I’m using chickpeas along with fresh veggies, olives, and pomegranate seeds. These look so adorable and I absolutely love the sweetness of the watermelon paired with the savory filling. Top these off with a drizzle of balsamic or tamarind chutney for a bit of tang, and there’s lunch for the afternoon sorted!

Ingredients
  • 12 squares watermelon , 2" by 2" pieces
Filling:
  • 1/2 cup chickpeas (garbanzo beans) , canned or boiled
  • 1/4 cup cucumbers , diced
  • 2 tbsp mixed color bell peppers , diced
  • 1/4 cup onions , diced
  • 2 tbsp olive , diced
  • 2 tbsp feta cheese
  • 1 cup thick yogurt
  • 1 tbsp olive oil
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black salt
  • 1/2 tsp chaat masala
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garlic powder
  • 1 tbsp honey
  • 1 green chilies , finely chopped
  • 3 tbsp pomegranate seeds
  • 4-5 mint leaves , finely chopped
  • 1 tbsp cilantro , finely chopped
Garnish:
  • white sesame seeds
  • pistachio crushed
  • microgreens
  • radish , sliced
  • pomegranate seeds
  • balsamic glaze , or tamarind chutney
Instructions
  1. To make the filling, in a bowl, combine the yogurt, olive oil, spices, honey, feta cheese, green chili and chickpeas. Mash the ingredients together until the chickpeas are mostly mashed. Then, add in the rest of the ingredients and mix until everything is well combined.

  2. Take the water melon and cut it into square slices that are 2”x2” big and ½” thick. Put a scoop of the filling on top of them and garnish with sesame seeds, pistachio, microgreens, radish, pomegranate seeds, and balsamic glaze. Your Watermelon Chaat Bites Recipe is ready, enjoy!

      Hi Arti, you can use tamarind chutney instead of balsamic glaze.
