Ingredients
Noodles:
  • 1 cup rice noodles
  • ¼ cup green onions , julienned
  • ¼ cup green mango , julienned
  • ¼ cup mixed color bell peppers , julienned
Peanut Sauce:
  • 2 tbsp peanut butter
  • 1 tbsp hot sauce
  • 1 tsp garlic , minced
  • 1 tsp ginger , minced
  • 2 tsp soy sauce
  • 2 tsp lemon juice
  • 1 1/2 tsp honey
  • 1 Thai red chilies , finely chopped
  • 1 tbsp basil leaves , finely chopped
  • 1 tbsp warm water , or as required to adjust the consistency of the sauce
  • salt , to taste
Watermelon Salad:
  • 1 cup watermelon , diced
  • ¼ cup cucumbers , diced
  • ¼ cup onions , diced
  • 2 tbsp roasted peanuts , coarsely crushed
  • 1 tbsp cashews , coarsely crushed
  • 1 tbsp cilantro , finely chopped
  • 6 basil leaves , torn
  • 6 mint leaves , torn
  • 1 tsp green chilies , finely chopped
Orange-Sesame Dressing:
  • 1 tbsp orange juice
  • 2 tsp lemon juice
  • 2 tsp sesame oil
  • 2 tsp soy sauce
  • 2 tsp honey , or maple syrup
  • salt , to taste
  • pinch black pepper
Garnish
  • toasted sesame seeds
Instructions
Peanut Sauce:
  1. For the peanut sauce, mix together all the ingredients together and adjust the salt according to your taste. If the sauce is too thick, add some warm water and adjust the consistency.

Thai Noodles:
  1. Soak your rice noodles in hot water as per package instructions. Once done, drain the water and spread the noodles on a plate to let dry so they don’t stick together.

  2. Then, toss the rice noodles with peanut sauce, green onions, green mangoes and bell peppers. Adjust the seasoning to your taste.

Watermelon Salad:
  1. To prepare the watermelon salad, mix everything together.

Orange-Sesame Dressing:
  1. To make the orange-sesame dressing, whisk together all the ingredients. 

Assembly:
  1. When you are ready to serve, take a small bowl. Add in Thai noodles and then some watermelon salad on top. Drizzle some orange-sesame dressing and garnish with toasted sesame seeds. Your Thai Watermelon Noodle Salad is ready to serve!

  • You can store the orange-sesame dressing in the fridge for up to a week.
  • Don't mix the orange-sesame dressing with the watermelon salad before you are ready to serve, otherwise the watermelon will leave water.
