Achari Paneer Upside Down Puff Pastry — with khatta-meeta paneer marinated in achari spices and a glossy honey top, this Indian-twist on the viral TikTok trend is nothing short of show stopping! Baked to flaky, golden-brown perfection, these aren’t going to last long!
- 1/2 cup paneer , sliced in strips
- 1/2 tsp mango powder (amchur)
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 1/2 tsp chaat masala
- 1 tsp kasoori methi
- 1 tbsp mixed pickle , store-bought, mashed
- salt , to taste
- 1 tsp oil
- 1 puff pastry sheet , cut in 9 squares
- 3 tbsp honey
- 1/4 cup onions , sliced
- 1/4 cup mixed color bell peppers , sliced
- 1 tsp onion seeds (kalonji)
- 1 tsp fennel seeds (saunf)

In a bowl, mix together the paneer with amchur, red chili powder, kasuri methi, garam masala, chaat masala, salt, mixed pickles, and oil. Let this marinate in the fridge for about 30 minutes.

Preheat your oven to 350℉/180℃.

Cut the sheet of puff pastry into 9 equal squares.

On a sheet of parchment paper, spread 1 tsp of honey in a small square. Sprinkle some onion seeds (kalonji) and fennel seeds. Then place 2 strips of your paneer and some sliced onions and pepper on top.

Cover this gently with your puff pastry square and seal the edges gently with a fork. Repeat this 8 more times for the other puff pastry squares.

Bake for 15 minutes until golden brown or as per package instructions. Use a spatula to gently flip over the puff pastry. Scrape off any honey that has oozed outside the edges.

Serve with mint garlic dip and pickled onions and enjoy!
