Spicy Peanut Maggi Noodles — an effortless way to spice up your usual Maggi routine, these noodles are tossed with crunchy vegetables and a creamy, peanut butter sauce. With jaggery, fresh ginger, and a squeeze of lemon, this is the most satisfying, elevated Maggi!
- 2 packs maggi 2 minute masala noodles (70 gm pack)
- 4 basil leaves , torn
- 1 tbsp cilantro , finely chopped
- 1 tsp toasted sesame seeds
- 1 tbsp roasted peanuts , coarsely crushed
- 1 tsp ginger , minced
- 1 tsp garlic , minced
- 2 tbsp peanut butter , I used crunchy peanut butter
- 1 tbsp tamarind pulp
- 1 tbsp soy sauce
- 1 1/2 tbsp jaggery
- 2 tsp sriracha , or any hot sauce
- 1/4 cup hot water
- 1 pouch maggi masala , that comes with maagi noodles
- 3 tbsp green onions , finely chopped
- 2 tbsp mixed color bell peppers , finely chopped
- 1 tbsp carrots , finely chopped
- 1 1/2 tbsp multicolor cabbage , finely chopped
- 1 tsp thai red chilies , finely chopped or use red chili flakes
- 1 tbsp oil , for tadka
- toasted sesame seeds
- roasted peanuts , coarsely crushed
- lemon wedges

Prepare maggi noodles according to package instructions.

In a large bowl, mix together all your sauce ingredients.

Then add in all your veggies.

In a small pan, heat oil and once it starts sizzling, add this tempering into the bowl.

Then add in your boiled maggi noodles, cilantro, basil, toasted sesame seeds and crushed roasted peanuts.

Mix everything together and adjust the seasoning according to taste. If needed, use hot water to adjust the consistency of noodles as per your preference. I like keeping the noodles a little more liquidy as it prevents it from becoming too dry and enhances the flavor.
