We’ll start by adding some chopped onions, tomatoes, cucumbers, potatoes, and in-season fruits for that hint of sweetness. Then we’ll toss in our sprouts which’ll help add volume and make this a guilt-free nutritious evening snack.
Now for the smoky twist! Put some ghee on a charcoal piece and cover for a few minutes to really infuse the flavors. The depth and richness from this is truly divine so definitely don’t skip out on this — it’s worth the extra effort.
Toss in the bhel, chutneys, a big squeeze of lemon, and our chatpata spices to finish this off.

- ½ cup onions , finely chopped
- ½ cup tomatoes , finely chopped
- ¼ cup cucumbers , deseeded & finely chopped
- ½ cup potatoes , boiled and chopped
- ¾ cup mixed fruits , finely chopped, I used peaches, apples & plums
- 1 cup boiled mixed sprouts , I used mung beans and chana
- 1 ½ cup bhel mix
- 1 tbsp cilantro chutney
- 1 tbsp tamarind chutney
- 1 1/2 tbsp lemon juice , as per taste
- 1 tsp red chili powder
- ½ tsp roasted cumin powder
- ½ tsp chaat masala
- salt , to taste
- 2 tbsp cilantro , finely chopped
- sev (bhujiya)
- strawberries , sliced
- 1 coal
- 1/4 tsp ghee

In a medium sized bowl mix together onions, tomatoes, cucumbers, potatoes, fruits and mixed sprouts.

Now, heat the coal on a stove or the grill using tongs. Once hot, place it in a small onion peel over the veggie-sprouts mix. Drizzle some ghee on top of the coal and quickly cover it with a lid. Let it sit for 1 minute and then carefully remove the onion peel with the coal.

Now, mix in bhel, cilantro and tamarind chutneys, all the spices, salt, lemon juice, and cilantro.

Your smoke infused Sprouts Bhel is ready. Garnish with some strawberries, sev (bhujiya), and enjoy!
