Matar ki Sabzi (Green Peas Curry) — savor sweet, in-season peas with this quick and simple sabzi that comes together in under 15 minutes! With a subtle spice contrasting the sweet peas, pair this with Rajasthani Bajre Ka Khichda or fresh roti for the perfect side!
- 2 cups peas , fresh or frozen
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/4 cup fresh tomato puree
- 1 tsp ginger garlic green chili paste
- 1 1/2 tsp red chili powder
- 2 tbsp coriander powder
- 1/2 tsp turmeric powder
- 1/4 cup milk
- 3 tbsp paneer , grated or chena (cottage cheese)
- 1 tsp lemon juice
- 1/2 tsp garam masala
- salt , to taste
- 2 tbsp cilantro , finely chopped

Heat oil in a pan on medium heat. Add in your cumin seeds and let crackle for a few seconds. Then, add in your garlic-ginger-chili paste, tomato purée, turmeric powder, coriander powder, and red chili powder. Sauté for 2 minutes until the oil starts to release.

Add in your milk and mix gently. Once the milk comes to a boil, add in your peas and paneer. If you are using fresh peas, add in 2 tbsp of water and cook covered for 2 minutes.

Mix gently and add in lemon juice, garam masala, and salt. Let sauté for 2-3 minutes.

Fold in cilantro and enjoy!
