- 5 medium onions , sliced
- 5 green chilies , slit length-wise
- 2-3 inches ginger , julienned
- 2 tbsp cilantro , with tender stems, finely chopped
- 1 tsp red chili powder
- 2 tsp vinegar
- 2 tbsp white sesame seeds
- 1 tbsp mustard seeds
- 1 tsp fennel seeds (saunf)
- 1/2 tsp fenugreek seeds (methi dana)
- salt , to taste
- 1 1/2 tbsp mustard oil , or any another oil
- 1/4 tsp turmeric powder
- 1 tsp onion seeds (kalonji)

In a mortar and pestle, coarsely grind white sesame seeds, mustard seeds, fennel seeds, fenugreek seeds, and salt. I used a Molcajete mortar and pestle that is made from volcanic stone.

Add in your onions, green chilies, ginger, cilantro, red chili powder, and vinegar.

In a small pan, heat oil and add in onion seeds (kalonji) and turmeric powder. Once crackling, add this tempering into the pickle.

Mix it well and your Onion Chili Sesame Pickle is ready!

Store in a sterilized jar in the fridge (for up to 2 weeks) and enjoy on rotis, sandwich, or salads.
