Green Garlic Bajra Methi Paratha — with healthy millets for a filling accompaniment to the most comforting lunch or dinner, these parathas are packed with flavor! With fragrant green garlic and hearty bajra for protein and fiber, pair these with a simple sabzi and raita for a picture-perfect meal!
- 1 cup bajra (pearl millet) flour
- 1/2 cup whole wheat flour
- 1/4 cup green garlic , finely chopped or use 3-4 cloves regular garlic
- 1/4 cup spring onions , finely chopped
- 1/2 cup methi leaves , finely chopped
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/2 tsp roasted cumin powder
- 1/2 tsp fennel seeds (saunf) , roughly crushed
- 1/4 tsp coriander seeds , roughly crushed
- 1/4 tsp carom seeds (ajwain)
- salt , to taste
- 1 tbsp oil
- warm water , as needed for the dough
- 2 tbsp green garlic and spring onions , finely chopped
- ghee , for drizzling

In a bowl, add all the dough ingredients except water. Mix them with your hands until the vegetables release their water. Knead it into a soft, firm dough by adding warm water gradually.

Divide the dough into 8-10 equal portions. Roll out each dough ball into a circular paratha of about 5" in diameter using a rolling pin. Sprinkle green garlic and spring onions on the paratha and press them in the dough using a rolling pin.

Heat a non-stick tava and place the rolled out paratha on it. Cook on medium heat till the base is partly cooked, then flip it over. Drizzle ½ tsp of ghee over the paratha and along the edges. Cook it by pressing with the help of a spatula. Now, flip it again, drizzle 1/2 tsp ghee, and cook by pressing slightly.

Cook till the paratha is golden brown on both sides.

Enjoy them warm with some aloo dum, kachumber salad, raita, cilantro chutney, and garlic chutney.

- If green garlic is not available, then you can use regular garlic, just increase the quantity of methi and spring onions.
