Fiery Peanut Satay Noodles — equal parts saucy and spicy, this is the ultimate quick meal that comes together in just 15 minutes! With crisp veggies and beautifully charred satay skewers, this wholesome meal is going to be your fav!
WATCH HOW TO MAKE FIERY PEANUT SATAY NOODLES:
In a bowl, combine together chili flakes, garlic, ginger, sesame seeds, scallions, onions, lots of lemon zest for freshness, and a splash of hot oil.
Add in soy sauce, a splash of vinegar, some honey or maple syrup to balance the heat, our creamy peanut butter, some coconut milk for that velvety texture, and a splash of lemon juice. Give this all a good mix and this is what I love about this recipe!
Just brush your tofu or paneer skewers with our sauce for the noodles and bake, airfry, or grill until golden brown and charred.

Thin the sauce out to your desired consistency with some hot water and then toss in your noodles and shredded veggies. I’ve used bouncy udon noodles and some carrots and cucumbers for a crisp bite.
Garnish this with some peanuts, your beautiful satay skewers, and you’re ready to dig in!

- 16 oz udon noodles , or any noodles of your choice
- 1 carrots , grated
- 1 cucumber , grated
- 1 1/2 tbsp gochugaru (korean chili flakes) , or 2 tsp red chili flakes
- 1 tsp garlic , minced
- 1 tsp ginger , minced
- 2 tsp toasted sesame seeds
- 1/4 cup green onions , finely chopped
- 1/4 cup red onions , finely chopped
- 2 tsp lemon zest
- 1 1/2 tbsp oil , hot, use any neutral oil
- 1 1/2 tbsp light soy sauce
- 2 tsp rice vinegar , or use any vinegar
- 2 tbsp maple syrup , or honey
- 2 tbsp peanut butter , unsweetened
- 2 tbsp coconut milk
- 2 tsp lemon juice
- 1/4 cup hot water , as needed as per your preferred consistency
- 4 oz tofu or paneer , cut into slabs
- green onions , finely chopped
- peanuts , coarsely crushed

For the sauce, in a bowl, combine together chili flakes or gochugaru, garlic, ginger, toasted sesame seeds, scallions, onions, lemon zest, and your sizzling oil.

Add in soy sauce, vinegar, honey or maple syrup, peanut butter, coconut milk, and lemon juice. Mix until well combined.
If you are using sweetened peanut butter then skip the maple syrup/honey.

Brush your tofu or paneer skewers with this sauce and bake, airfry, or grill until golden brown and charred. In an oven or air-fryer at 375℉ / 190℃ it should take about 10 minutes.

Thin the sauce out with hot water to your desired consistency. Then, toss in your noodles and shredded veggies.

Garnish this with some scallions, peanuts, your satay skewers, and you’re ready to dig in!
