Ingredients
Spicy Moong:
  • 1/2 cup whole moong beans , boiled with salt and turmeric
  • 1/2 tsp red chili powder
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp chaat masala
  • 2 tsp lemon juice
Sandwich Assembly:
  • 4 naan , or bread or kulcha
  • 1 tomatoes , sliced
  • 1 red onions , sliced
  • 1 potatoes , boiled and sliced
  • 1/4 cup mixed color bell peppers , sliced
  • 1 small cucumber , sliced
  • 1 small beetroot , boiled and sliced
  • 1/4 cup cheese , shredded
  • 2 tbsp sriracha mayo
  • 2 tbsp cilantro chutney
  • 1 tbsp chaat masala , or sandwich masala
  • 1 tbsp butter
Instructions
  1. To make the spicy moong filling, mix together all the ingredients and roughly mash with the back of a spoon.

  2. To assemble the sandwiches, you can use naan, bread, or kulcha — I used naan. On one naan spread sriracha mayo and then layer your moong filling, tomato, onion, potato, bell peppers, cucumbers, beet, cheese, and a sprinkle of sandwich masala. On another naan add a layer of cilantro chutney and place on top of the other half. Brush the naan with butter (and optionally kalonji seeds) and grill in a panini press or in a pan. Slice in half and enjoy!
