Street-Style Naan Panini — a fun Desi-inspired grilled sandwich featuring a spicy moong filling, crisp veggies, and melty cheese! With cilantro chutney and a sprinkle of masala for that extra kick, these paninis are perfect for a new breakfast or after-school snack idea!
- 1/2 cup whole moong beans , boiled with salt and turmeric
- 1/2 tsp red chili powder
- 1/2 tsp roasted cumin powder
- 1/2 tsp chaat masala
- 2 tsp lemon juice
- 4 naan , or bread or kulcha
- 1 tomatoes , sliced
- 1 red onions , sliced
- 1 potatoes , boiled and sliced
- 1/4 cup mixed color bell peppers , sliced
- 1 small cucumber , sliced
- 1 small beetroot , boiled and sliced
- 1/4 cup cheese , shredded
- 2 tbsp sriracha mayo
- 2 tbsp cilantro chutney
- 1 tbsp chaat masala , or sandwich masala
- 1 tbsp butter

To make the spicy moong filling, mix together all the ingredients and roughly mash with the back of a spoon.

To assemble the sandwiches, you can use naan, bread, or kulcha — I used naan. On one naan spread sriracha mayo and then layer your moong filling, tomato, onion, potato, bell peppers, cucumbers, beet, cheese, and a sprinkle of sandwich masala. On another naan add a layer of cilantro chutney and place on top of the other half. Brush the naan with butter (and optionally kalonji seeds) and grill in a panini press or in a pan. Slice in half and enjoy!
