Grilled Pineapple Skewers - kickoff the big game this Sunday with these juicy, tangy, and deliciously caramelized Hawaiian skewers. With sweet pineapple coated in spiced mint marinade, you’re guaranteed to bring the heat to this year’s Super Bowl!
- 1 small pineapple , diced
- 2 cups broccoli , washed and cut into florets
- 2 medium red bell peppers , diced in big cubes
- 2 medium green bell peppers , diced in big cubes
- oil , for grilling
- chaat masala , sprinkle on top
- 2 tbsp mustard oil
- ½ cup hung curd or greek yogurt
- 2 tbsp chili paste , or 1½ tbsp red chili powder
- 1/2 tsp turmeric powder
- 2 tbsp ginger garlic paste
- 1 ½ tsp dried mint
- 1 tsp roasted cumin powder
- 2 tsp lemon juice
- salt , to taste
- 1 tbsp roasted besan (gram or chickpeas flour)
- 2 tsp honey

Blanching: In a large pan, heat the water and salt and let it come to a boil. Add in the broccoli and let sit for 1 minute and take them out onto a kitchen towel to dry. Make sure not to overcook them, they should still be crunchy.

Make the marinade: Mix together all of the marinade ingredients in a large bowl. Add in the pineapple, blanched broccoli, red and green bell peppers, and cover with cling wrap. There is no need to rest this marinade, otherwise the pineapple will start releasing its water.

Soak the wooden skewers in water for 30 minutes to an hour before using, so that they don’t burn while grilling.

Grill: Arrange the marinated pineapple, broccoli, red and green bell peppers onto skewers, and grill them on:
Griddle: Grill the skewers on a griddle. Apply oil and marinade with a brush, and turn the skewers while grilling.
or
Oven: Preheat the oven 375F/190C, lay out the skewers on a greased baking tray, brush with oil and grill for 10-15 minutes until done. Turn the skewers half way through.
or
Air Fryer: use a preheated Air Fryer at 360F/180F for 8-10 minutes until done. Turn the skewers half way through.
If you want, you can apply some marinade with a brush while cooking.

Garnish: Take them out and sprinkle some chaat masala. Serve them with lemon, onions and a dip of your choice. You can also serve them as a wrap with some naan or paratha. Enjoy!
