I love Mexican elotes in the summer and these fritters are a new way to serve those same spicy, tangy, sweet flavors. Serve these at your Rakhi party or a end-of-summer get-together and you’re guests are sure to fall in love!

Crisped to golden brown perfection, these cheesy Corn Fritters are bursting with sweet corn, smoked paprika, and hints of lemon. Pair them with a spicy mayo for a little kick and you can’t beat these crunchy, vibrant fritters!
- 1½ cup fresh corn , about 2-3 corn ears
- 2 tbsp rice flour
- 3 tbsp all purpose flour
- 1/2 jalapenos , deseeded and diced
- 1 medium red onions , finely chopped
- 4 green onions , chopped
- 1/4 cup cilantro , finely chopped
- 1/2 cup milk , or as needed
- 2 tbsp mayonnaise
- 1/4 cup cheese
- 1 1/2 tsp lemon juice
- 1/2 tsp lemon zest
- 1 tsp red chili powder , or smoked paprika
- 1/2 tsp black pepper
- 1 tsp cumin powder
- 1/2 tsp baking powder
- 1-2 tbsp oil , for cooking
- salt , to taste
- 2 tbsp mayonnaise
- 1 tbsp sour cream
- 1 tbsp sriracha

Divide the corn into halves. In a food processor, add half the corn and your jalapeños, pulsing 2-3 times until it’s coarsely mashed.

Now in a bowl, add in both corns, all purpose flour, rice flour, baking powder, cheese, spices, mayonnaise, cilantro, onions, green onions, lemon juice and lemon zest. Mix until combined. Slowly add in your milk until you achieve a thick consistency.

Heat oil in a pan on medium heat and add 2 tbsp cup of batter (I used an ice-cream scooper for this) and flatten gently. Cook for 1-3 minutes on each side until golden brown and crispy. Take out onto a paper towel and repeat for the remaining batter. If needed, add more oil into the pan.

Mix together your sauce and serve with these Crispy Corn Fritters! Enjoy!

Hi, you can use chickpea flour (same amount) in place of flour. To replace Mayo, you can use 2 tsp of hot oil for the crispiness.
