Greek Tomato Fritters — crisp and golden brown, these fritters are the perfect Thanksgiving side and pair so well with a zingy, homemade tzatziki! I had these for the first time in Santorini last summer—where they’re traditionally called tomatokeftedes — and fell in love with the melt-in-mouth texture!
WATCH HOW TO MAKE GREEK TOMATO FRITTERS:
We’ll start by salting out tomatoes and letting them sit for a bit to remove excess water. Then for the fritters, combine together tomatoes, onions, fresh herbs like parsley and mint, green onions, some simple spices along with all purpose flour for binding and baking powder for crispness.
Give this a gentle mix and you’ll notice that all the liquid from the tomatoes will help this come together into a wet dough.
Now, we’re ready to fry these until beautifully golden brown and crisp! I like flattening them into this patty shape for the maximum crunchy surface area.

We’ll pair these with a simple, refreshing tzatziki made with yogurt, cucumbers, garlic, dill, spices, and lemon.
Trust me when I say that there’s no Thanksgiving side that will be a bigger hit than these super fresh, herby, and crisp tomato fritters that take me back to seaside dinners in Santorini!

The fritters are such a perfect complement to any dinner table, with a melt-in-mouth texture and that addictively zingy tzatziki sauce. You’re going to love this!

Greek Tomato Fritters — crisp and golden brown, these fritters are the perfect Thanksgiving side and pair so well with a zingy, homemade tzatziki! 🍅✨ I had these for the first time in Santorini last summer—where they’re traditionally called tomatokeftedes — and fell in love with the melt-in-mouth texture! 😍
- 4 medium tomatoes , diced
- 1/4 tsp salt , for the tomatoes
- 1/2 cup shallots (onions) , finely chopped
- 1/4 cup parsley , finely chopped
- 15-20 sprig mint leaves , finely chopped
- 1/4 cup green onions , finely chopped
- salt , to taste
- 1 tsp red chili flakes
- 1/2 tsp black pepper
- 1 cup all purpose flour
- 1 tsp baking powder
- oil , for frying
- 1 cup hung curd or greek yogurt
- 2 small english cucumbers , grated and lightly squeezed
- 2-3 tbsp dill , finely chopped
- 2 cloves garlic , minced
- salt , to taste
- 1/4 tsp black pepper
- 2 tsp lemon juice
- olive oil , for garnish
- red chili powder , for garnish
- dill , finely chopped for garnish
- green onions , finely chopped

Mix your salt and tomatoes together and leave them in a bowl for 10-15 mins. Then, strain your tomatoes, making sure to remove all of the excess water.

In a bowl, combine your drained tomatoes with onions, parsley, mint, green onion, salt, red pepper flakes, black pepper, all-purpose flour, baking soda. The water from the tomatoes will help create a wet dough.

Heat some neutral oil for frying on medium heat. Use an ice cream scoop or a spoon to drop your batter into the oil and then flatten it into the shape of a patty. Make sure your patty is not too thick, otherwise it won’t get crispy!

Once your fritters are fried, create a quick tzatziki yogurt dip by mixing together all of your ingredients and garnish with olive oil, red chili powder and some dill.

Garnish your Greek Tomato Fritters with green onions and serve with the tzatziki, enjoy!

- If you want, you can add 2 tbsp of feta cheese (make sure to balance the salt). I don't like adding it as it makes the fritters too dry.
