<p>Sarson ka saag is a traditional North Indian winter dish made with mustard greens, spinach, and bathua (goosefoot greens). Since some of these aren’t available in the US, I’ve used broccoli and radish to emulate some of that delicious fresh flavor!</p>

										<div class="wprm-recipe-instruction-text"><p>Add the mustard greens, spinach, broccoli, radish, dried mango, ginger, green chilies and water into the pressure cooker. Pressure cook for 1 whistle on high flame and 1 whistle on medium flame.</p></div>

If you don&#039;t have a hand blender, wait for it to cool down and then blend it coarsely using a regular blender in pulse mode. Transfer the greens mix to another bowl and keep it aside.</p></div>

<li>The mustard greens and spinach are in a 2:1 ratio, meaning that spinach is half the quantity of the mustard greens.</li>
<li>Make sure that you don't blend the greens into a fine paste, we still want to retain some of that texture so keep it more coarse.</li>
<li>If you're using a regular blender, make sure to only use the pulse mode when blending the green because we don't want them to become too fine.</li>
<li>The tomatoes should be coarsely blended and not fine like a puree. Alternatively, you can just finely chop the tomatoes.</li>
<li>Make sure that the sarson ka saag is made in ghee or butter for the best flavor.</li>
