<p>We’ll start by salting out tomatoes and letting them sit for a bit to remove excess water. Then for the fritters, combine together tomatoes, onions, fresh herbs like parsley and mint, green onions, some simple spices along with all purpose flour for binding and baking powder for crispness.</p>
<p>Give this a gentle mix and you’ll notice that all the liquid from the tomatoes will help this come together into a wet dough.</p>
<p>Now, we’re ready to fry these until beautifully golden brown and crisp! I like flattening them into this patty shape for the maximum crunchy surface area.</p>
