Ingredients

Dahi Puri Chaat:

  • 20 pcs papdi
  • 1/4 cup onions , finely chopped
  • 3 tbsp carrots , shredded
  • 3 tbsp beetroot , shredded
  • cilantro chutney , as needed
  • chili garlic chutney , as needed
  • tamarind chutney , as needed

Potato Masala:

  • 1 cup potatoes , boiled and chopped
  • 1/2 tsp red chili powder
  • 1/2 tsp roasted cumin powder
  • salt , to taste

Mung Sprout Mixture:

  • 1 cup sprouted mung beans (moong beans) , boiled
  • 1/2 tsp red chili powder
  • 1/2 tsp roasted cumin powder
  • salt , to taste

Strawberry Rose Yogurt:

  • 1 1/2 cup thick yogurt
  • 3 strawberries , pureed
  • 2 tsp rose water
  • 1 tbsp sugar

Instructions

Strawberry Rose Yogurt:

  1. Mix together the yogurt, rose water, strawberry puree, and sugar until combined. If you want a deep pink color then add freshly squeezed beetroot juice or food color. You can use milk or water to adjust the consistency of the yogurt.

Potato Masala:

  1. Mix potatoes with red chili powder, roasted cumin powder and salt.

Mung Sprout Mixture:

  1. Mix boiled mung sprouts with red chili powder, roasted cumin powder and salt.

Make the Chaat:

  1. Arrange 5 pcs of papdi on a plate.

  2. Add a layer of potato masala, followed by mung sprout mixture and onions.

  3. Then sprinkle some carrots and beetroots.

  4. Drizzle some mint-cilantro chutney, chili-garlic chutney and tamarind chutney on top.

  5. Now, cover it with a thick layer of strawberry rose yogurt.

  6. Finish it with some sev (bhujiya) and sprinkle some chaat masala.

  7. Garnish with red currants and microgreens and your Strawberry Rose Dahi Puri is ready!

  • Prepare the chaat when you are ready to serve otherwise the papdi will turn soggy.
