Mix together the yogurt, rose water, strawberry puree, and sugar until combined. If you want a deep pink color then add freshly squeezed beetroot juice or food color. You can use milk or water to adjust the consistency of the yogurt.
Mix potatoes with red chili powder, roasted cumin powder and salt.
Mix boiled mung sprouts with red chili powder, roasted cumin powder and salt.
Arrange 5 pcs of papdi on a plate.
Add a layer of potato masala, followed by mung sprout mixture and onions.
Then sprinkle some carrots and beetroots.
Drizzle some mint-cilantro chutney, chili-garlic chutney and tamarind chutney on top.
Now, cover it with a thick layer of strawberry rose yogurt.
Finish it with some sev (bhujiya) and sprinkle some chaat masala.
Garnish with red currants and microgreens and your Strawberry Rose Dahi Puri is ready!
