Ingredients

Dressing:

  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup , or honey
  • 1 tsp salt
  • 1 tsp sumac
  • 1 tsp lemon juice
  • 2-3 cloves garlic , minced
  • 1/2 tsp black pepper

Salad:

  • 1 cup farro , boiled, you can also use bulgur wheat or couscous or quinoa
  • 1 cup chickpeas (garbanzo beans)
  • 1/4 cup tomatoes , chopped
  • 1/4 cup purple cabbage , chopped
  • 1/2 cup cucumber , sliced
  • 1/4 cup pickled onions
  • 1/4 cup pomegranate seeds
  • 1/4 cup black olives , sliced
  • 2 tbsp parsley , finely chopped
  • 8-10 mint leaves , finely chopped

Garnishes:

  • pumpkin seeds
  • pistachio
  • sunflower seeds
  • mint leaves
  • feta cheese , crumbled

Instructions

  1. For your salad dressing, mix together all the dressing ingredients. Mix until the dressing is emulsified.

  2. Then, in a bowl, mix together the salad ingredients and pour your dressing on top. Toss your salad until everything is well coated.

  3. Garnish with pistachios, sunflower seeds, pumpkin seeds, mint leaves and feta cheese. Your Mediterranean Chickpea Salad is ready, enjoy!
