Cilantro Chili Lime Noodles

Cilantro Chili Lime Noodles — fresh, tangy, and bursting with flavor, these are my go-to for an easy lunch whenever I’m craving noodles! With tons of fresh cilantro, cucumbers, onions, chilies, and garlic, along with a few Indian spices and Asian sauces, this is ready in just minutes!

Ingredients

  • 1/2 cup onions , finely chopped
  • 1/2 cup green onions , finely chopped
  • 1/2 tbsp cilantro with tender stems , finely chopped
  • 1/4 cup red peppers , finely chopped
  • 2 cloves garlic , finely chopped
  • 2 tsp curry powder
  • 1 tsp red chili powder
  • 1/2 tsp red chili flakes
  • salt , to taste
  • 3 tbsp oil , for tadka
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 3 tsp sweet and sour sauce
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 cucumbers , shaved
  • 8 oz noodles
  • 2 tbsp peanuts , crushed
  • 1 tbsp white sesame seeds

Instructions

  1. Cook the noodles according to package instructions. Then drain and rinse them under cold water.

  2. In a large bowl, mix together onions, cilantro, green onions, red peppers, garlic, curry powder, red chili powder, paprika and salt.

  3. In a small pan, heat oil and once it starts sizzling, add this tempering into the bowl. Mix everything well.

  4. Now, add honey, soy sauce, sweet & sour sauce, lemon zest, lemon juice and cucumbers.

  5. Then add the noodles and toss everything together. Adjust the seasonings as per your taste.

  6. Garnish with crushed peanuts and sesame seeds. These quick and easy Chili Lime Noodles are ready! Enjoy!

  • You can store this in an air-tight container in a fridge for upto 2 days. Just don't add the garnish.
