Ingredients

  • 2 pink grapefruits , peeled and segmented
  • 2 oranges , peeled and segmented
  • 2 cups arugula
  • 1/4 cup peanuts , roughly crushed

Honey-Lime Dressing:

  • 2 tbsp olive oil
  • 1 1/2 tbsp honey
  • 2 tsp lemon juice
  • 2 tbsp cilantro , finely chopped
  • 2 green chilies , finely chopped
  • 1/2 tsp red chili powder
  • 1 tsp roasted cumin powder
  • 1 1/2 tsp poppy seeds
  • salt , to taste

Instructions

  1. In a serving bowl, whisk together all the dressing ingredients.

  2. Then add in your arugula, grapefruit, oranges and peanuts.

  3. Toss them together and serve immediately.
